Thought you may wish to see why Stef has not been on her computer much since mid week. She has been resting with her foot up in the air. She had surgery on the bottom of her foot, and will have to be off of her foot for a few weeks. (The goofy tubes are a new type of ice machine supply, they recirculate ice water from a small ice chest to the wound)
With that said, anyone out there got any “quickie” husband cooking recipes you may wish to share, she is balking at the take out burritos I brought home at lunch (not really, she has been extremely grateful for any of my help) Have a great weekend, Greg

Hey Stef and Greg, I was getting online to look at the new book and noticed the blog. I’m so sorry Stef that you’re going to be laid up like this for a while but I do wish you a speedy recovery.
I’m getting ready to head to the Ranch and thought I’d get a couple of your books. They’re so enjoyable.
Wishing you the very best and Greg here’s a recipe for you. Serve the chops with some crusty bread and a nice tossed salad.
Orange-Glazed Pork Chops
Ingredients:
No-Stick Cooking Spray
4 pork chops, trimmed
1/2 cup orange juice
1/4 cup orange marmalade
1/4 cup brown sugar
1 Tblsp. apple cider vinegar
Directions:
In a sauce pan combine the orange juice, marmalade, brown sugar and cider. Bring to a boil and then lower heat and let simmer for 15 minutes.
Preheat oven to 400. Lightly spray a medium skillet with cooking spray. Over medium heat, saute pork chops on each side until nicely browned. Transfer chops to a baking pan.
Using a pastry brush, brush orange mixture on top side of chops, then turn chops over and brush mixture on other side.
Bake chops for 10-12 minutes, depending on thickness. This cook time would be based on thin cut.
