Hey Stef and Greg, I was getting online to look at the new book and noticed the blog. I'm so sorry Stef that you're going to be laid up like this for a while but I do wish you a speedy recovery.

I'm getting ready to head to the Ranch and thought I'd get a couple of your books. They're so enjoyable.

Wishing you the very best and Greg here's a recipe for you. Serve the chops with some crusty bread and a nice tossed salad.

Orange-Glazed Pork Chops

Ingredients:

No-Stick Cooking Spray
4 pork chops, trimmed
1/2 cup orange juice
1/4 cup orange marmalade
1/4 cup brown sugar
1 Tblsp. apple cider vinegar

Directions:
In a sauce pan combine the orange juice, marmalade, brown sugar and cider. Bring to a boil and then lower heat and let simmer for 15 minutes.

Preheat oven to 400. Lightly spray a medium skillet with cooking spray. Over medium heat, saute pork chops on each side until nicely browned. Transfer chops to a baking pan.

Using a pastry brush, brush orange mixture on top side of chops, then turn chops over and brush mixture on other side.

Bake chops for 10-12 minutes, depending on thickness. This cook time would be based on thin cut.

Good Luck, compliments of your neighborhood Personal Chef.

Take Care Stef!
